Potato Fry (Potato mezhukuperetti )


Ingredients:

1. Potato (medium size 3-4) -- sliced in to cubes
2. Chilly powder - 1/2 tsp
3. Coriander powder - 3/4 tsp
4. Turmeric powder - 1/4 tsp
5. Pepper powder - 1/4 tsp
6. Salt - add as per taste
7. Oil - 2 tbp

Preparation:

1. Cook the sliced potatoes in water(Add 1/2 tsp of salt). When it get's cooked (the piece should be intact and if we cut with a spoon it should get easily sliced in to two halves) drain the water.
2. Take a pan heat it for 1 min , then add oil keep it for 2-3 min in medium flame
3.Turn off the stove add all the ingredients from 2-6 in to the oil and mix well.
4. Add the cooked potatoes in to it and mix it well with the ingredients.
5. Fry the potatoes for 15-20 mins in low flame.

Tasty potato fry is ready to be served :-)



Tips:
1. Potato fry goes best with rice and pulishery.
2. Use a non stick kadai for frying, it gives good crispiness to the potato.

Ulli/Vendakai Theeyal

This is the most amazing and easiest way of doing theeyal, and it also tastes very good.. This is especially for all the busy people out there who juggle home/ work/ studies/ kids together and still want to cook something in a very easy way, which usually takes lot of time(Some of you might have already tried this!!!)

The dish is called Ulli(small onion) theeyal/Vendakai(Ladies finger) theeyal(depending on what you put in). This is my easiest recipe for same.

Ingredients:

Chutney powder
1) Black chutney powder(Chammanthi podi) -- This is the dry form of coconut chutney which you get in packets, I have seen this only Kerala, and got this last time when I went home.Take 2/3 of a bowl(normal soup bowl)
2) Ulli/Vendakkai --Ulli (2/3 of a bowl) my personal favorite is ulli, it tastes better
3) Curry leaves - 5-6
4) Green chilli - 2-3 (split in to 2 halves)
5) Mustard seeds -1/3 teaspoon
6) Salt -- according to your taste
7) Oil -- 11/2 teaspoon

Preparation:

1) Take a pan, when it gets heated,  add Oil
Vendakkai(bhindi) theeyal
2)  Add Mustard seeds, let it splutter
3)  Add Curry leaves and green chilli saute it for a minute,
4)  Then add chopped small onions(cut them in to 2 pieces or four depending on their size).Saute them for 3-4 minutes till they turn a little golden brown.

5) In another bowl mix chutney powder along with 2-3 cups of water(consistency should be that of a curry). When the small onion turns golden brown add this mixture of chutney powder and water.
6) Add salt as per taste.
7) Keep the mixture for 10-15 minutes (first 5 minutes in high flame and second 10-15 minutes in low flame)

Tips - 1) Try to add less oil while making tadka as the chutney powder might already have lot of oil  (Be healthy  :-))
2) Put small onion in water for some time, then it becomes easy to peel.
